Lemon Sole

The Recipe:
- 1 pound of lemon sole (buy it the day you are going to cook it, preferably on a Friday
- Place each piece of sole in flour and dust off excess.
- Break two eggs and mix gently with a fork.
- Dip fish into the egg mixture making sure you cover the fish completely.
- Cover fish with Italian bread crumbs.
- Place a thin layer of imported olive oil on baking dish.
- Place fish in baking pan and cover with tin foil.
- Pre-heat oven to 350° and cook for 1/2 hour. Less if the stove is electric.
